What's The Definition of Secondary Fermentation?

Secondary Fermentation: The fermentation process in Méthode Champenoise which occurs in the bottle by adding a small amount of sugar and yeast. The yeast and sugar interact within the sealed bottle, creating alcohol and carbon dioxide. This gas in the bottle gives sparkling wine its effervescence.
